In Part Two, Steph McGovern concludes her exploration of the history of salt, as she examines in greater detail the role of the product in food, focusing on its growth as an attractive artisan ingredient. She also considers the health warnings concerning its over-consumption, and talks to a campaign group who even suggest reducing the number of holes in chip-shop shakers.
